Neutral: Capon, guinea fowl, hen, rooster, chicken, ostrich, turkey, chicken and turkey sausages (without lactose, gluten, pork, modified starch, and preservatives).
Not recommended/red light: Lamb, duck, beef or horse bresaola, kid, horse, wild boar, rabbit, pheasant, pork and pork sausages, beef, mutton, goose, veal, all types of smoked meat.
Suggested/green light: carp, grouper, whitefish, land snails (Helix pomatia), cod, golden perch, salmon (not smoked), sardines, mackerel, rainbow trout.
Neutral: pike, dogfish, swordfish, amberjack, sea bass, sturgeon, tuna, salmon trout.
Not recommended/red light: anchovy, eel, lobster, herring, caviar, mussels, prawns, crabs, halibut, hake, sea bream, oysters, catfish, octopus, frogs, smoked salmon, sole, clams, mollusks.
Better to prefer natural fish, not canned. Avoid fried, breaded or smoked fish.
Neutral: feta cheese (fresh goat cheese and Greek sheep), goat cheese, goat ricotta, goat yogurt.
Not recommended/red light: Avoid all other dairy products, especially fatty and seasoned ones.
More and more scientific studies show that there is a correlation between dairy consumption and tumor development. For this reason, in addition to not being tolerated by a large part of the population, dairy products should be consumed as little as possible or completely eliminated from a healthy diet.
Soy and Derivatives
Suggested/green light: Gluten-free soy cheese (tofu), soy drink, soy yogurt.
Check if the soy products are well tolerated by your body; sometimes it can create problems. It is important to always choose organically grown soybeans that do not contain GMOs
Suggested/green light: never fried in oil or butter. For cooking eggs, it is preferable to use pans with a stone bottom.
Oils and Fats
Suggested/green light: sunflower oil, linseed oil, extra virgin olive oil, rice oil, pumpkin seed oil, grape seed oil.
Neutral: cod liver oil, sunflower oil, almond oil.
Not recommended/red light: peanut oil, corn oil, sesame oil, butter
Seeds and dried fruit
Suggested/green light: peanuts, peanut butter, walnuts, pumpkin seeds.
Neutral: sunflower butter, almond butter, hazelnut butter, sesame butter. Chestnuts, almonds, hazelnuts, pecans, macadamia nuts, pine nuts, sunflower seeds, poppy seeds, sesame seeds.
Not recommended/red light: cashews, brazil nuts, pistachios.
Do not combine chestnuts with cereals and dairy products. Avoid them during the summer. Do not exceed eating nuts, and never in the summer. If you have any problems with digesting almonds, you can try peeled ones.
Check that sweet dried fruit (plums, figs, raisins, dates, etc.), do not have added sugar. Always prefer organic products.
Suggested/green light: Azuki (red soy), black beans, eye beans, lentils, red lentils, yellow and green soy.
Neutral: fresh borlotti beans, cannellini beans, green beans, broad beans, lupins, peas, snow peas.
Non recommended/red light: dried borlotti beans, chickpeas, white Spanish beans.
Although soybeans are among the recommended foods, some people don't tolerate it. It is always better to check their tolerability in small doses first. There are three types of soybeans: yellow, green and red.
Cereals and the like
Suggested/green light: amaranth, buckwheat flour pasta, buckwheat, Kasha (toasted buckwheat).
Neutral: corn starch, oat flakes, rice flour and waffles, corn (cornflakes, polenta, etc.), millet, barley, pearl barley, quinoa, white rice, brown rice, semi-brown rice, red rice, black rice, wild rice, sorghum, tapioca.
Non recommended/red light: couscous, spelled bran, wheat bran, Kamut bran, spelled, potato starch, wheat, wheat germ, Kamut, muesli, rye (also bread), seitan, durum wheat semolina.
Check that oats and barley are well tolerated and use them in moderation. Apart from specific intolerances, it is good to remember that these cereals contain gluten; therefore they must be avoided for celiacs and those with evident gluten intolerances.
As we age, it is best to avoid starchy foods and cereals. Especially at dinner, it would be a good rule not to use it; they tend to raise cholesterol, blood sugar, blood pressure, and weight.
Among the crackers that best satisfy balanced eating habits, always not exceeding their use, we mention the crackers of quinoa, rice, millet, corn, and buckwheat.
Corn, rice, and millet in any form should not be consumed together with wine and lemon.
Bread: preferably it should be rice, millet, quinoa, buckwheat, oats.
Pasta: only if made from rice, corn, millet, barley, buckwheat (100%), oats, soy (100%), or soy and corn.
If possible in summer, avoid buckwheat porridge or chestnut flour. Instead, corn and millet polenta can be used in moderation, occasionally.
Quinoa must always be well cooked.
Suggested/green light: garlic (if not digestive problems), chard (leaf and ribs), broccoli artichokes, carrots, chicory, onions, alpha-alpha sprouts, soybeans, endive, leek, parsley, turnips, spinach, dandelion, Jerusalem artichoke, cabbage, pumpkin.
Neutral: seaweed, asparagus, red beets, cauliflower, brussels sprouts, chervil, cucumbers, daikon (white root of japan), fennel, mushrooms, curly endive, green olives, red radicchio, radishes, arugula, shallots, celery, black and white truffle white, zucchini.
Non recommended/red light: cabbage, Chinese cabbage, red cabbage, aubergines, black olives, potatoes, white and red sweet potatoes, chili, peppers, tomatoes.
Always use seasonal vegetables, organically grown. The varieties of mushrooms are many and change with the climate and latitude. Avoid eating them in breadcrumbs and fried, better sautéed with eggs.
In the case of hepatitis or other liver problems, it is best to avoid consuming mushrooms.
Suggested/green light: apricot, pineapple, carrots, cherry, lemon, blueberry, grapefruit, plum.
Neutral: cabbage, apple, pear, grapes.
Not recommended/red light: orange, papaya, tomato.
Better to avoid fruit juices in winter
Suggested/green light: apricots, pineapples, cherries, fresh and dried figs, lemons, blueberries, blackberries, grapefruit, plums, prunes, sultanas.
Neutral: watermelon, avocado, persimmon, carob, cedar, dates, prickly pears, strawberries, kiwi, raspberries, pomegranate, apples, yellow melon, pears, peaches, black and red currants, elderberries, white and red grapes.
Not recommended/red light: oranges, bananas, mandarins, mandarins, mango, melon, coconut, papaya, Chinese rhubarb.
The use of seasonal organic fruit is recommended, preferably in summer. Eat it alone or with meat, fish, oilseed meals; avoid it with cereals.
Some people may have difficulty digesting pears and apples. In this case, you can cook them instead of eating them raw. As for jams, better alone (as a snack) or combined with meat and egg proteins. They can also be combined with oil seeds (peanut butter etc.); avoid combination with starchy foods or cereals. Lemons can be used instead of vinegar, taking care not to combine them with cereals.Intolerances towards peaches are very common; those who manifest the symptoms must refrain from consuming them. Dried fruit (plums, figs, raisins, dates, etc.), should be organically grown and never with added sugar.
Spices and the like
Suggested/green light: miso (soy only), tamari (soy only sauce), mustard (without vinegar), ginger.
Neutral: bay leaf, anise, basil, bergamot, cinnamon, coriander, cumin, turmeric, curry, tarragon, chives, fennel seeds, brewer's yeast, marjoram, mint, nutmeg, oregano, rosemary, salt (do not exceed in use), sage, savory, mustard, thyme, saffron.
Not recommended/red light: Balsamic, wine vinegar (white and red), apple vinegar, capers (especially pickled), gelatin, glutamate, ketchup, mayonnaise, pepper of all kinds, red chili pepper, Chinese rhubarb, pickles, sweet and sour vegetables.
Yeast is quite tolerated if not combined with flour, especially those containing gluten.
Avoid consuming nut for broth containing glutamate or beef.
Sweets and sweeteners
Suggested/green light: molasses.
Neutral: rice drink, oat drink, dark chocolate, almond milk, barley malt, honey, maple syrup, agave syrup, beet sugar, brown sugar.
Not recommended/red light: aspartame, candies, chewing gum, sugar-free sweets, synthetic sweeteners, fructose, maltodextrin, Xylitol.
Honey should be dissolved in a warm (not hot) or room temperature drink. Brown sugar is extracted from sugar cane and belongs to the grass family. So-called "sugar-free sweets" do not exist; even if they do not contain sucrose, they are made with glucose, fructose, maltose, xylitol, etc. As regards cereal malts, people who have intolerance to cereals, in general, are better off avoiding them, especially those with gluten.
Preserves and sauces
Neutral: allowed jams, sauces based on basil, artichokes, parsley and soy, mustard without the addition of vinegar.
Not recommended/red light: vinegar, capers, ketchup and other sauces made with tomato, mayonnaise, sauces containing green or black olives, cream, pepper, chili, peppers, pickles, sweet and sour vegetables.
Suggested/green light: natural water, chicory coffee, green tea, bancha tea, red wine (in moderation).
Neutral: coffee (in moderation), ginseng coffee, barley coffee, karkadè, fennel herbal tea, white wine.
Not recommended/red light: diet drinks, carbonated or cola-based drinks, alcoholic cocktails, cider, black tea, decaffeinated tea.Regarding ginseng coffee, it is necessary to verify that it does not contain cream or other substances.
It is important to remember that barley coffee contains gluten.
As for wine, it is best to avoid it in the evening. It can be used instead of oil for cooking. It is preferable to drink the one without adding sulfites.
Herbs and plants
Suggested/green light: aloe, burdock, hawthorn, chamomile, roman chamomile, milk thistle, echinacea, fenugreek, ginseng, hypericum, propolis (resin produced by bees), dandelion, valerian, ginger.
Neutral: yarrow, birch, calendula, eucalyptus, coltsfoot, fennel seeds, strawberry, raspberry, mulberry, mint, parsley, licorice root, sage, elderberry, linden, verbena.
Not recommended/red light: sorrel, barbs of corn, hops, pepper of all kinds, Chinese rhubarb, red clover.
